Luscious Lemon Poppy Seed Loaf with Lemon Poppy Glaze

Bursting with lemon flavor and supremely moist, this bright lemon poppy seed loaf is a perfect spring dessert!

Ingredients:

For the loaf:

¼ cup unsalted butter, softened to room temperature

½ cup white granulated sugar

½ cup sour cream

2 eggs

4 tablespoons fresh lemon juice

2 tablespoons lemon zest

1 teaspoon almond extract

2 cups all-purpose flour

1 tablespoon poppy seeds

1 ½ teaspoon baking soda

¼ teaspoon salt

For the Glaze:

2 tablespoons fresh lemon juice

1 cup confectioners’ sugar

½ teaspoon poppy seeds

Instructions:

  1. Preheat the oven to 350°.

  2. Using a stand mixer with a paddle attachment, beat the butter, sugar, and sour cream until combined.

  3. Add the eggs, one at a time and continue mixing at medium-low speed until smooth.

  4. Add lemon juice, zest, and almond extract and mix until combined.

  5. In a separate medium bowl, whisk the flour, poppy seeds, baking soda, and salt together.

  6. Gradually add the flour mixture to the mixer on medium-low speed. Mix until the batter is smooth and uniform.

  7. Pour batter into a greased 9x5” glass loaf dish and bake at 350° for 40 minutes or until a toothpick comes out clean. Set on a wire rack to cool.

  8. Whisk ingredients for the glaze together in a small bowl and pour over lemon loaf. Allow glaze to set and then serve. Enjoy!
