Creamy Ranch Cucumber Dip

How is it already August?! Summer, please slow down.

Anyway, with August being the hottest month of the year, I wanted to create an easy, COOL recipe. I don’t know about you, but the last thing I feel like using in this blistering heat is my oven.

My grandmother also gave me a ton of mini cucumbers from her garden, and I didn’t want them to go to waste. This cool Greek yogurt ranch dip is perfect for any veggie, but I can’t deny that it pairs perfectly with cucumbers!

Toppings

If you want to add a little extra pizazz, top it with mild olive oil and chopped chives.

Let’s get started!

Ingredients

  • ¾ cup plain Greek yogurt

  • ¼ cup sour cream

  • 1 ranch seasoning packet

  • 1 tablespoon mild olive oil

  • 2 teaspoons dried dill

  • 2 tablespoons chopped chives

  • Additional mild olive oil, for drizzling on top

Instructions:

  1. In a small bowl, whisk together the Greek yogurt and sour cream. Add the seasoning packet, olive oil, and dill to the mixture and whisk again until combined.

  2. Top your dip with chopped chives and a drizzle of olive oil. Enjoy with sliced cucumbers!
