This recipe calls for heirloom tomatoes, but if you don’t have any, don’t worry! Any fresh garden tomatoes will work just fine. :)
Ingredients:
2 medium red heirloom tomatoes, diced
1 cup yellow heirloom cherry tomatoes, halved
1 (15 oz) can garbanzo beans, drained and rinsed
½ lemon, squeezed
2 tablespoons ribboned basil
1 tablespoon robust olive oil
1 teaspoon sea salt
¼ teaspoon fresh cracked black pepper
Extra sweet basil leaves, for topping
Instructions:
Dice and halve the tomatoes and add to a large bowl. Add the garbanzo beans and gently toss everything together.
Squeeze the lemon half over the tomatoes and add the basil, olive oil, sea salt, and black pepper. Gently toss.
Garnish your salad with small clusters of fresh basil leaves. Enjoy!
