I can't go without mentioning my grandfather in this post - as he loved peaches so much! They were his favorite summer fruit. Whenever I think of juicy, sweet peaches, memories of him come flooding back. He would always have a smile on his face whenever he indulged in a perfect peach. His love for peaches was contagious. Peach Blueberry Compote

Ingredients

  • 2 tablespoons unsalted butter

  • 2 tablespoons orange juice

  • ¼ cup light brown sugar, packed

  • 2 fresh peaches, sliced ¼-½”

  • 1 cup fresh blueberries

  • 1 tablespoon cornstarch

  • ¼ teaspoon almond extract

  • Whipped cream, for topping

  • Fresh mint leaves, for garnishing

Instructions

  1. In a large skillet over medium heat, melt the butter and then add the orange juice, brown sugar, cornstarch, and almond extract. Stir to combine.

  2. Add the peach slices and blueberries to the skillet. Gently stir to coat them in the compote sauce. Cook on medium heat for approximately 5 minutes until bubbly. Set aside and allow the compote to cool.

  3. If you wish to serve the compote chilled, chill in the refrigerator for about 2 hours before serving. If you want to serve the compote while it is still warm, spoon about ¼ of the compote into a dessert dish. Top with whipped cream and garnish with fresh mint leaves. Enjoy!
