Bursting Blueberry Muffins
makes 12 muffins
Ingredients
2 cups all-purpose flour
⅔ cup sugar
½ teaspoon baking soda
¼ teaspoon salt
1 large egg
¾ cup milk (any milk should work)
½ cup unsalted butter, melted
1 teaspoon vanilla extract
1 ½ cup fresh blueberries
2-3 tablespoons of extra sugar for topping
Instructions
Preheat oven to 350𝇈F.
In a large bowl, mix dry ingredients together. In a separate medium bowl, whisk together wet ingredients.
Combine ingredients (add wet mixture to dry mixture) and gently fold in blueberries.
Pour about ¼ cup of batter into each muffin tin and sprinkle with sugar.
Bake for 20-23 minutes or until a toothpick comes out clean. Enjoy!
