Grilled Sweet Peppers with Burrata and Herbs

However, the scorching July heat has sadly taken its toll on the delicate cilantro, causing it to bolt and bloom prematurely (may she rest in peace). I must bid farewell to my dear cilantro until cooler temperatures grace us once more.

Nevertheless, my love for these herbs remains unwavering. They bring an extra dimension of aromatic pizzazz to numerous dishes, enhancing their flavors and creating a symphony for the taste buds. My meals are elevated with a pinch of fresh basil, a sprinkle of vibrant mint, or a dash of fragrant thyme. Although I mourn the loss of my cilantro, my garden continues to be a source of inspiration and culinary delight.

Grilled Sweet Peppers with Burrata and Herbs

Ingredients

  • 1lb mini sweet peppers

  • 2 tablespoons robust olive oil

  • 1 lemon, squeezed

  • 1 tablespoon hot honey + a little extra for drizzling on top

  • 2 teaspoons chili powder

  • 2 (2-ounce) balls burrata cheese

  • Fresh basil and thyme, for topping

Instructions

  1. Remove tops from peppers, halve, and remove seeds. Set aside.

  2. In a large bowl, whisk together olive oil, lemon juice, hot honey, and chili powder. Add peppers to bowl and toss to coat.

  3. Grill peppers* for 3-5 minutes until lightly charred, turning halfway through. Remove from grill.

  4. Evenly place peppers on a plate. Break burrata into smaller pieces and evenly disperse over peppers.

  5. Top with an extra drizzle of hot honey and herbs. Enjoy!

*If you do not have a grill, you can also broil peppers in the oven for 5-10 minutes (watch carefully)
