Savory Skillet Chicken & Apples

Chicken tenders seasoned with fresh thyme leaves, lemon juice, lemon zest, salt, & pepper, seared and browned to perfection in butter, and baked with cinnamon-spice apples.

Lately, meals at home have revolved around what takes the least amount of time and effort to prepare and clean up. This fall-inspired recipe is a current favorite in our home for those reasons (and because it is super delish!).

I don’t know about you, but working full-time and being nine-months pregnant is not for the weak! After commuting almost 2 hours through traffic every day, I just want to have a bowl of cereal or ramen and hit the hay once I get home from work. Does anyone else feel me out there?

We are officially full-term as of this week, which marks the start of my maternity leave! This week, it has been glorious to get caught up on housework, laundry, and most importantly— meal planning! I think about how our little guy will be here any day and how I want him to grow up with the similar experiences I had growing up, which include family dinners.

That is where this recipe comes in. It is easy to make while still giving more oomph than a bowl of ramen. ;)

Pair with mashed potatoes and green beans and you have yourself a delicious dinner!

Savory Skillet Chicken & Apples

Ingredients

  • 2lb chicken tenderloins

  • 2 McIntosh Apples

  • 4 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 10-14 sprigs fresh thyme

  • 1 lemon, halved

  • 2 teaspoons lemon zest

  • Salt & pepper, to taste

  • 2 teaspoons cinnamon

  • 1 teaspoon nutmeg

  • Dash of allspice

  • Dash of ground clover

Instructions

  1. This step is 100% optional, but I always rinse poultry prior to cooking & remove the tendons from tenderloins. Pat dry.

  2. Over medium-high heat in a large skillet, melt butter, add olive oil, swirl together, and then add chicken. Squeeze ½ lemon over the tenders and season with about 8-10 sprigs of fresh thyme leaves, salt, pepper, and lemon zest.

  3. While the chicken tenders are browning, thinly slice the apples and place them in a medium-sized bowl. Squeeze other lemon half over the apple slices & add cinnamon, nutmeg, allspice, ground clover, and additional fresh thyme leaves. Toss to evenly coat.

  4. Add apples to the skillet. Cook with chicken for about 5 minutes.

  5. Transfer to an 8x8 baking dish. Bake at 350𝇈F for 15 minutes.* Enjoy!

*Chicken should reach an internal temperature of 165𝇈F to ensure doneness.
