Watermelon Mint Mojito

Celebrate the weekend with this refreshing Watermelon Mint Mojito!

What You Need

The refreshing flavors of watermelon, lime, and mint make this mojito the perfect summer beverage. In a 16-ounce glass, I added 3 ounces of a smooth French-style white rum; however, you are welcome to to whatever white rum you prefer. Finally, it is lightly sweetened with 2 ounces of simple syrup and topped with fizzy coconut water and a ton of crushed ice.

It was so fun to create and photograph this recipe! I love the colors and how you can get so creative with summer drinks.

Side note: If you prefer to not use any kind of alcohol, you can simply omit the white rum to create a lovely mocktail.

Let’s get started!

 

Ingredients

  • ½ cup watermelon cubes

  • 1 lime

  • 10 mint leaves

  • 3 oz white rum

  • 2 oz simple syrup

  • 1 can fizzy coconut water

  • 1 cup crushed ice cubes

Instructions

  1. Muddle the watermelon in the bottom of a 16 ounce glass.

  2. Cut the lime into wedges and squeeze all of them into the glass over the muddled watermelon.

  3. Place the mint leaves in one hand and gently smack it with the other hand. (This will release that fresh minty aroma!) Add the leaves to the glass.

  4. Pour the rum and syrup into the glass.

  5. Add crushed ice on top and finish your mojito off with a splash of fizzy coconut water. Cheers!
