Herby Cherry Tomato and Mozzarella Bruschetta
This pan-roasted cherry tomato bruschetta with fresh mozzarella slices and garden herbs make this a delicious summer appetizer!
This bruschetta is perfect for entertaining and a great way to use fresh, summer garden tomatoes.
Using fresh-from-the garden cherry tomatoes honestly brings back SO many memories for me. As a kid, one of my “go-to” snacks was the annual yellow cherry tomatoes my grandmother had growing around her pool. In East Tennessee, we like to refer to them as “Tommy Toes.”

Ingredients
For the bruschetta:
1 large baguette
½ cup olive oil
2 tablespoons sea salt
For the topping:
16 oz pre-sliced fresh mozzarella
1 ¼ cup red cherry tomatoes
2 tablespoons olive oil
1 tablespoon minced garlic
½ tablespoon sea salt
1 teaspoon oregano
1 tablespoon fresh thyme, plus additional sprigs for topping
About 10 fresh sweet basil leaves
Optional Topping: drizzle of balsamic glaze
Instructions
For the bruschetta:
1. Preheat the oven to broiling temperature (around 500°F.) Slice the baguette into ½” thick pieces. Place the slices onto a full-size sheet pan.
2. Drizzle the baguette slices with ½ cup of olive oil and sprinkle with sea salt. Broil the bread in the oven for 2-3 minutes or until lightly toasted. Remove from the oven and set aside, allow the bruschetta to cool.
For the topping:
3. Add the tomatoes, garlic, oregano, sea salt, and 2 tablespoons of olive oil to a large skillet over medium-high heat. Stir to combine and pan roast the tomatoes for about 15 minutes to burst the tomatoes and concentrate the flavor.
4. After the tomatoes are roasted, stir in the fresh thyme leaves. Set the roasted tomato topping to the side and allow it to cool.
Assemble:
5. Add 1 slice of fresh mozzarella to each piece of bruschetta, followed by about 1 tablespoon of the cherry tomato topping. Garnish with more sprigs of fresh thyme, fresh sweet basil leaves, and a drizzle of balsamic glaze. Enjoy!
