Sometimes, I struggle with cooking just enough for two. Leftovers can be nice sometimes, but if you aren't a fan of them, they can just lead to food waste. It's a delicate balance between making sure we have enough to enjoy and not ending up with a mountain of uneaten food. That's why I love recipes like this one. Although it feeds four, you can easily divide the portions if you are only cooking for two. Just swap the 9x13 baking dish for an 8x8 one, and you'll have the perfect amount for a satisfying meal without any excess. It's a simple solution to minimizing food waste while still enjoying a delicious home-cooked meal.

On Halloween night, after the whirlwind of trick-or-treaters had finally subsided, my husband and I found ourselves famished at almost 9PM. Determined to conjure up a satisfying meal in record time, I set out to create a delightful dish that would satiate our hunger. In a mere 30 minutes, I crafted these delish, savory apple pork chops with stuffing. Now, not only has this meal become a tradition for every Halloween, it has become a staple recipe for our busy weeks!

Savory Apple Pork Chops with Stuffing
Ingredients:
8 boneless pork chops
2 tablespoons olive oil
1 egg
¼ cup milk
½ cup all-purpose flour
½ teaspoon seasoning salt
¼ teaspoon pepper
1 (6 oz) box of pork stuffing mix
3 McIntosh Red Apples
¼ cup brown sugar
¼ teaspoon cinnamon
Instructions:
Heat the olive oil in a large skillet over medium heat and preheat the oven to 350°.
In a shallow dish (a pie dish will work), whisk the egg and milk together. In a separate shallow dish, add and mix the flour, salt, and pepper. Dip each pork chop into the egg mixture first, and then dip them into the flour mixture to completely coat. Shake off any excess.
Add the pork chops in batches (3-4 at a time) to the skillet. Sear the pork chops for 2-3 minutes on each side until browned. Set Aside.
While the pork chops are browning, prepare the pork stuffing mix as directed on the package.
Slice the apples thinly and add to a medium-sized bowl. Toss and coat them in brown sugar and cinnamon.
Once the stuffing is prepared, spoon into a 9x13” baking dish. Next, arrange the browned pork chops on top of the stuffing. Lastly, evenly arrange the apple slices over the pork chops.
Bake in the oven at 350° for 25 minutes or until pork chops reach an internal temperature of 145°. Enjoy!
