Easy Game Day Chicken Nacho Casserole

This is a perfect gameday entree for feeding a crowd OR if you have a spouse with an enormous appetite. ;)

Ingredients:

  • 1 lb chicken breasts (about 3)

  • 1 white onion

  • 1 (13 oz) bag round tortilla chips

  • 1 (7 oz) bag shredded quesadilla cheese, or 2 bags if you want extra cheesiness!

  • 1 (16 oz) can traditional refried beans

  • 1 fajita seasoning mix packet

Instructions:

  1. Prep the chicken and place in a crockpot. Roughly slice the onion and add to the crockpot. Add fajita seasoning packet to the crockpot and cook everything on high for 3-4 hours.

  2. Once the chicken is finished cooking in the crockpot, shred it with a handheld electric mixer or 2 forks.

  3. In a 9x13’ casserole dish, begin layering the casserole with about ½ of the tortilla chips. Next layer with the shredded chicken, then the refried beans, and lastly, the cheese. Repeat the layers once more and bake in the oven at 375° for about 20 minutes or until the cheese is golden on top. Serve with salsa, sour cream, chopped cilantro, avocado, etc. Enjoy!
