Oatmeal Crumble Cranberry Bars

Ingredients

For the base:

  • ½ cup all-purpose flour

  • ½ cup brown sugar

  • 1 cup quick or old-fashioned oats

  • ½ cup unsalted butter, cold & cubed

  • ¼ teaspoon salt

  • ¼ teaspoon baking powder

For the fruit layer:

  • 2 cups fresh or frozen cranberries

  • 2 tablespoons sugar

  • Splash of water

For the top crumble:

  • 2 tablespoons flour

  • ⅓ cup brown sugar

  • ½ teaspoon cinnamon

  • 2 tablespoons butter, cold & cubed

Instructions

  1. Whisk the flour, brown sugar, oats, baking powder, and salt together in a large bowl. Using a pastry cutter, combine the butter with the mixture until the mixture resembles crumbs. With a spoon, press the base into a greased 8x8 pan.

  2. In a medium bowl, wet and toss the cranberries with a splash of water (this is to get the sugar to stick!). Next, add the sugar and toss once more until completely coated. Add cranberry layer to the pan.

  3. For the top crumble, combine the flour, brown sugar, & cinnamon in a small bowl. Using a pastry cutter, cut the 2 tablespoons of butter into mixture. Sprinkle the crumble mixture evenly over the cranberry layer.

  4. Bake at 350° for 40-45 minutes. Cool for 1-2 hours, cut into bars, and enjoy!
