Cheesy Winter Sausage Bake

Winter is a time where everything seems to slow down, creating a serene atmosphere that encourages introspection and reflection. Sweet potatoes, sausage, and apples take center stage in a dish that epitomizes comfort and contentment. This delightful combination of flavors brings together the natural sweetness of the potatoes and apples, balanced by the savory notes from the sausage. Winter may be a time of hibernation, but it doesn't mean we can't indulge in the heartwarming nourishment that this season has to offer. Another one of my absolute favorite aspects about this delightful dish has to be the irresistibly mouthwatering CHEESE! A divine combination of Gruyere and cheddar cheese is thoughtfully grated, meticulously sprinkled over the dish, and then placed under the broiler to achieve the most desirable golden hue. As if that wasn't tempting enough, the cheese bubbles and melts to create a truly delectable masterpiece.

For this dish, you will need…

  • sweet potatoes

  • apples

  • celery

  • yellow onion

  • sage sausage

  • olive oil

  • 1 teaspoon Herbs de Provence

  • ½ teaspoon fiori and salt

  • ½ teaspoon thyme

  • ½ teaspoon oregano

  • ¼ teaspoon rubbed sage leaves

  • gruyere and cheddar cheese

A huge shoutout to my talented father-in-law for growing the juicy and flavorful apples used in this mouthwatering recipe. His dedication and expertise in cultivating these apples have truly made a difference in the final result, adding a burst of fresh, natural sweetness to every bite.

Start by peeling and cutting the sweet potatoes into 1” pieces. Next, cut apples into 1/2” pieces. In a large bowl, toss with olive oil, fiori & salt, and Herbs de Provence. Add to a 9x13 baking dish and bake at 400𝇈F for 35-40 minutes. Meanwhile, add olive oil, celery, onion, and additional herbs to large skillet over medium-high heat. Stir and cook for about 5 minutes and then add sausage. Cook until sausage is done.

Remove the sweet potato-apple mixture from oven and add the sausage. Toss everything gently and top with both cheeses. Pop back into the oven and broil for 2-3 minutes or until cheese is melty, golden, and bubbly.

Cheesy Winter Sausage Bake

Ingredients

  • 1.5lb sweet potatoes (about 3-4 potatoes)

  • 1lb apples (about 2-3 apples)

  • 4 celery stalks

  • 1 small yellow onion

  • 1lb sage sausage

  • 2 tablespoons olive oil

  • 1 teaspoon Herbs de Provence

  • ½ teaspoon fiori and salt

  • ½ teaspoon thyme

  • ½ teaspoon oregano

  • ¼ teaspoon rubbed sage leaves

  • Gruyere & cheddar cheese, for topping

Instructions

  1. Preheat oven to 400𝇈F.

  2. Peel and cut sweet potatoes into 1” pieces. Cut apples into ½” pieces. Add to a large bowl and toss with 1 tablespoon olive oil, Herbs de Provence, and fiori and salt.

  3. Add sweet potato and apple mixture to a 9x13 baking dish. Bake in oven for 35-40 minutes.

  4. While sweet potatoes and apples are baking, add additional tablespoon of olive oil, onion & celery to a large skillet over medium-high heat. Add thyme, oregano, and sage. Stir and cook for about 5 minutes and then add sausage. Cook until done.

  5. Remove sweet potatoes and apples from oven. Add sausage mixture to baking dish and gently toss.

  6. Sprinkle gruyere and cheddar cheese over mixture. Broil in oven for 2-3 minutes or until cheese is melty, golden, and bubbly. Enjoy!
