After the butter melts, it will begin to bubble and foam. Continually stir over medium-low heat until golden amber flecks are present. Immediately remove the brown butter from heat to avoid burning.

Stir light brown sugar into the skillet (try not to drool).

The dry ingredients (flour, baking soda, cinnamon & salt) are mixed in a separate bowl as well as the remaining wet ingredients (mashed banana, milk, egg, & vanilla extract). Lastly, the brown butter mixture is gently folded in.

Ingredients

For muffins:

  • 1 large ripe banana, mashed

  • 1 cup all-purpose flour

  • ½ cup light brown sugar, packed

  • 1 large egg

  • ¼ cup unsalted butter

  • ¼ cup milk (any milk should work, I used almond milk)

  • 1 tablespoon vanilla extract

  • ¼ teaspoon baking soda

  • ½ teaspoon ground cinnamon

  • Pinch of salt

For streusel topping:

  • ½ cup chopped walnuts

  • 3 tablespoons all purpose flour

  • 2 tablespoons light brown sugar

  • ¼ cup unsalted butter, cold & cubed

Instructions

For muffins:

  1. Preheat oven to 350𝇈F.

  2. In a medium-sized skillet over medium-low heat, melt the butter. Continue to heat the butter until golden flecks are visible and a toasted, nutty aroma is present. Remove from heat and stir in the brown sugar. Set aside.

  3. Whisk together the flour, baking soda, cinnamon, and salt in a medium-sized bowl.

  4. In a separate smaller bowl, mix the mashed banana, milk, egg, and vanilla extract together.

  5. Add the banana mixture to the flour mixture until just combined. Next, gently fold and stir in the brown butter mixture. Spray 6 muffin tin cups with nonstick spray. Fill each cup ¾ full with the batter.

    For streusel topping

  6. In a medium-sized bowl, add chopped walnuts, flour, brown sugar, and cubed butter. Using a pastry cutter or a fork, combine the mixture until coarse crumbles form.

  7. Evenly sprinkle the crumble over each muffin before baking.

  8. Bake for 20-25 minutes until a toothpick comes out clean. Enjoy!
