Festive Snowman Pancakes

Adults can still have fun with their food too, right?! These are also perfect to make with kiddos when it’s cold and snowy out.

Ingredients:

  • 1 & ½ cups all-purpose flour

  • 3 & ½ teaspoons baking powder

  • 1 tablespoon sugar

  • ¼ teaspoon salt

  • 1 & ¼ cups milk

  • 1 egg

  • 1 tablespoon unsalted butter, melted

  • 1 teaspoon vanilla

Instructions:

  1. In a large bowl, combine the flour, baking powder, sugar, and salt.

  2. In a separate medium bowl, whisk the milk, egg, melted butter, and vanilla together. Add wet ingredients to dry and whisk once more. Be careful not to overmix-- the batter will have lumps!

  3. In a large, heated skillet sprayed with nonstick spray, pour a small pancake for the snowman head, a slightly larger pancake for the middle, and a larger pancake for the base. Flip when the top of the pancakes become bubbly and cook until the other side is golden brown, 1-2 minutes.

  4. Decorate your snowman pancakes with whatever you like! I just used what I had on hand (chocolate chips for the eyes and buttons, icing for the nose and mouth, candy cakes for the arms, and marshmallows & confectioners’ sugar for “snow!”). Enjoy!
