Easy One-Pot Chicken Fajitas
Ingredients
1lb chicken strips
2 tablespoons olive oil
1 small white onion, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
1 package reduced sodium (or regular) fajita seasoning
¼ teaspoon cayenne pepper
1 teaspoon minced garlic
1 lime
¼ bundle of fresh cilantro, finely chopped
8 (6”) flour tortillas
Optional toppings
Diced avocado
Sour cream
Shredded cheese
Instructions
Cut chicken strips into small cubes.
Heat 1 Tbsp of olive oil in a large pot over medium-high heat. Add chicken and season with ½ fajita seasoning packet, minced garlic, and lime juice from ½ lime. Stir fry for about 10-15 minutes or until chicken is completely cooked. Set aside.
In the same pot, heat the other Tbsp of olive oil over medium heat. Add onion and bell peppers. Stir fry for 5-10 minutes, seasoning with the remainder of the fajita seasoning packet and juice from the other lime half.
Add the chicken back to the pot and stir. Lastly, add chopped cilantro and toss once more.
Assemble fajitas by putting about ¼-½ C of the filling down the center of a warmed flour tortilla. Enjoy with black beans, rice, and any additional toppings you choose. Enjoy!
