Apple Pie Phyllo Bars

This recipe was born out of sheer improvisation. Originally, I planned to use puff pastry dough. But alas! Fate had a different plan. Puff pastry dough seems to have become a hot commodity in our surroundings, as elusive as a hidden treasure.
The nearest location was a hefty 45-minute drive away, so I faced a predicament. As the woes of parenthood are known all too well, braving such an expedition with little ones in tow is no easy feat. Especially when my daily job rattles us with two-hour commutes during worn-out weekdays.
In no mood to embark on another exhaustive journey, I decided to turn this challenge into an opportunity. I had some frozen phyllo dough already handy, and thought, why not? After brainstorming ideas, a solution emerged, and these yummy bars were born.
Phyllo dough, commonly known for its delicate and paper-thin layers, is traditionally reserved for mouthwatering pastries like baklava or Greek spinach pie; however, we got creative with this one. The result? A delightful combination of crispy, buttery, flaky layers cocooning tender apple slices, kissed with warm cinnamon and sweetened with a touch of brown sugar. With each bite, you'll experience a symphony of flavors and textures that will leave you craving more. Who said apple pie can only be made with traditional crusts?

Apple Pie Phyllo Bars
Ingredients
For the phyllo dough layers
10 sheets phyllo dough
1 cup light brown sugar
3 tablespoons butter, melted
Extra cinnamon and brown sugar to sprinkle on top
For the apples
3-4 apples, thinly sliced
⅓ cup light brown sugar
2 tablespoons unsalted butter, melted
½ lemon, squeezed
1 tablespoon cinnamon
Instructions
Preheat oven to 375𝇈F. Line a baking sheet with parchment paper.
Unroll phyllo dough and place 2 sheets on a baking pan. Brush melted butter on the dough and sprinkle with brown sugar. Repeat until you have 10 sheets layered.
In a large bowl, toss sliced apples in lemon juice, then brown sugar, butter, and cinnamon.
Arrange apple slices evenly over the dough, leaving about 2 inches of dough around the outside edge.
Sprinkle a little extra cinnamon on top to finish, and bake for 20 minutes.
Remove from oven, sprinkle extra brown sugar on top, allow to cool, and cut to serve. Enjoy!
